Chicken with Garden Fresh Chimichurri Recipe

This recipe is simple, fresh, flavorful, and comes together quickly with just a few ingredients. It’s perfect for busy evenings, especially in this back-to-school season, where we want to quickly feed our families nutritious food.

Parsley is the star of this recipe, and packs a punch of flavor as well as tons of health benefits including being vitamin rich, loaded with antioxidants, and has been used to treat conditions like high blood pressure, allergies, and inflammatory diseases in herbal medicine.

You’ll need some cooked chicken (thighs, breasts, tenderlions, whatever you’ve got will work) This bold chimichurri is also amazing over flank steak; it’s truly an all-purpose sauce that works on many different meats.

INGREDIENTS:

-PROTEIN OF YOUR CHOICE (we are using chicken)

– 1 cup flat leaf parsley fresh from the garden

-4 garlic cloves finely minced

-1/3 cup extra virgin olive oil

-2 1/2 tsp red wine vinegar

-1/2 tsp dried oregano or 1 tbsp fresh from the garden

-sea salt, black pepper, and red pepper flakes to taste (about 1/4 tsp each, although we like a bit more salt)

Prepare your chicken.

Finely chop parsley and garlic.

Mix together all chimicurri sauce ingredients in a bowl.

Spoon over hot chicken and rice if desired. Enjoy!!
